There, the local farmers use traditional methods to tap the sap from coconut flowers which is the ONLY ingredient in our sugar. Coconut sugar is gaining popularity as a healthier alternative to cane sugar, mainly due to its low Glycemic Index of 35. Apart from that it adds a rich flavour to coffee and cakes. It is a common ingredient found in Asian kitchens but relatively unknown to the rest of the world.
